Production Area: In Piedmont, exclusively in the Monteu Roero region on the hill called "Occhetti".
Soil: Calcareous hilly ground.
Grapes: Nebbiolo al 100%
Harvest: Mid-october
Alcohol: 14% Vol.
Service temperature: 16°C - 18°C
Yield per hectare: 6,000 kilos of grapes.
Bottles produced: 10,000
Vinification: Destemming and crushing of the grapes, maceration at 32°C for 12 days, pressing, racking, aging for 18 months, then bottling. Clarifications or filtrations aren't done.
Maturation: 16 months in French oak barrique.
Aging: 3 months in bottle before sale.
Colour: Red con light-red reflections.
Aroma: Delicate, very refined, with dried flowers and vanilla hints.
Flavour: Tannic but soft, almost seem sweet, very complex and persistent.
Food Matches: Game meat, braised and roasted meat, cheeses.
Conservation: In the dark, in a lay-down bottle at 10° - 12°C with 75% of humidity.
Annotations: It's a very refined and structurated wine, with a low level of acidity. Improves in the first 4-5 years and, if is well preserved, it last many years.
