Production Area: In Piedmont, exclusively in the Monferrato region.
Soil: Calcareous hilly ground.
Grapes: Assembling of Sauvignon, Riesling and Chardonnay grapes, in various percentages depending on the years.
Harvest: End of August.
Alcohol: 13% Vol.
Service temperature: 10°C - 12°C
Yield per hectare: 8,000 kilos of grapes.
Bottles produced: 5000
Vinification: Crushing of the grapes, fermentation at 16°C, filtration and bottling.
Maturation: 6 months on their fermentation lees.
Aging: Two months in bottle before sale.
Colour: Light golden yellow.
Aroma: Intense, mineral with flowers and bread hints.
Flavour: Full flavour, tasty, with a marked acidity.
Food Matches: Tasty fishes, shellfish and cheeses.
Conservation: In the dark, in a lay-down bottle at 10° - 12° C with 75% of humidity.
Annotations: Improves in the first 6-8 years of aging.
